Aging: The grapes, harvested in the first ten days of September, are vinified separately, enhancing the different characteristics of the soil. The resulting Chardonnay selections undergo lengthy aging in the cellar and around 30% in French oak tonneaux. The cuvée is made in summer and matures for another 3 months in stainless steel tanks. During this time the wine reaches its equilibrium and natural clarification, resulting in a bottling without filtration. The wine rests in the bottle for at least 6 months.
Description: Chardonnay Diaol has a golden color with strong green tones. The aromas of yellow plum and peach nectarine alternate with mineral and brackish notes, creating an intense and intriguing olfactory profile. In the mouth, the sensations are multiple. Tense and grainy taste where saltiness and crunchiness stand out to complete a rich and lingering finish.
